Peas with mint

1 | cup | Diced onion |
1½ | teaspoon | Grated lemon zest |
2 | packs | (10-oz) frozen tiny peas,, thawed |
Salt,, to taste | ||
Pepper,, to taste | ||
1 | tablespoon | Chopped fresh mint |
Directions
In a medium saucepan, melt butter over low heat. Add onion and lemon zest.
Cook gently, stirring occasionally, until onion is soft but not browned, about 4 minutes. Add peas, and stir to combine thoroughly. Season with salt and pepper. Cook, stirring, about 5 minutes or until peas are heated through. Stir in mint and serve immediately. MasterCook formatted by Ethel Snyder
