Bamia stew

Ingredients

½ | kilograms | Okra; remove heads |
¼ | kilograms | Lamb or beef |
1 | large | Onion; chopped |
4 | larges | Tomatoes; chopped |
1 | can | Tomato paste |
Salt | ||
1 | teaspoon | Coriander seed; ground |
1 | teaspoon | Cumin |
½ | teaspoon | Black pepper |
1 | tablespoon | Tamarind pulp soaked in water |
3 | Cloves garlic; chopped |

Brown the meat without oil until it absorbs all its liquid. Add the onions then the spices and garlic. Mix well and add the tomatoes. Let the stew cook on med. heat w/ the lid on. Add the water when the tomatoes appear to soften. Let it simmer for 15 min. then add the okra, paste and salt. Let the stew cook slowly and towards the end add the strained tamarinds. Serve hot w/ rice.
