Banana pecan bread (muffins)

Ingredients

Quantity Ingredient
cup Sugar
cup Oil
2 cups Flour
teaspoon Salt
1⅓ teaspoon Baking soda
3⅓ medium Bananas; mashed
3 Eggs
cup Pecans; chopped
teaspoon Vanilla

Directions

Preheat oven to 350 degrees.

Cream sugar and oil. Add bananas and eggs. Add dry ingredients. Mix thoroughly and pour into two greased loaf pans or muffin tines. Bake about 45 minutes for loaves; 30 minutes for muffins.

Makes 20 small muffins. Bake for 30 minutes.
