Ingredients

Quantity Ingredient
5 Feet medium hog casings
4 pounds Bison (buffalo) meat, with fat, cubed
1 pounds Beef fat, cubed
2 teaspoons Salt
2 cloves Finely minced garlic
2 teaspoons Finely minced shallots
½ teaspoon Cayenne
2 teaspoons Sweet paprika

Directions

fPrepare casings. Grind the meat and fat together through the coarse disk. Add remaining ingredients and mix well. Grind through the fine disk twice. Stuff into casings, tie off into 3-4" links and cook as for any fresh sausage.
