1 | pack | (10-oz) spinach; thawed and drained |
1 | pounds | Lean ground beef; cooked and drained |
2 | cans | Cream of mushroom soup; (reduced fat) |
1 | can | Asparagus spears; with juice |
1 | cup | Cooked white rice |
Salt and pepper to taste | ||
8 | slices | American cheese; diced |
Directions
Here's an unusually good throw together dinner. Suggestion: When fixing a ground beef dinner, brown an extra pound and store it in some tupperware.
Later in the week, when you have a cup of leftover rice (or pasta) mix this all together and throw it in the oven. Good and easy. Kick it up a notch with some garlic and some of Emeril's Essence. Enjoy Mix all ingredients together thoroughly, pour into casserole evenly. Top with 8 more slices of American cheese.
Cook covered in a 350 degree oven for 15 minutes, uncover and cook 15 additional minutes.
