Boiled fruit cake

Ingredients

Quantity Ingredient
1 pounds Mixed dried fruit
1 cup Water
½ cup Margarine
1 teaspoon Baking soda
½ cup Sugar
dash Of vinegar
2 cups Flour
1 teaspoon Baking powder
teaspoon Mixed spices
2 eaches Eggs
Nuts and flavouring (optional)
2 ounces Brandy (optional)

Directions

In saucepan, mix together the first 6 ingredients. Bring to a boil and simmer for about 15 minutes. Remove from heat and allow to cool.

When cool, add the remaining ingredients and mix until blended.

Spoon into pans and bake at 300F for about 1-½ hours. Will fill an 8 inch square pan, or loaf pans. Origin: Kathy Davis (my Avon lady) Shared by: Sharon Stevens, Jan/95.
