Breakfast sausage bake~

Ingredients

2 tablespoons Margarine
1 pounds Mushrooms -- finely chopped
1 cup Dry bread crumbs
1 16 oz pkg Turkey breakfast sausage, thawed
1 Red or green bell pepper --
Chopped
3 tablespoons Chopped fresh parsley -- OR
1 tablespoon Parsley flakes
¼ teaspoon Ground red pepper
2 Cartons cholestrol-free egg product (8 ounces each)
OR
8 Eggs -- beaten

Directions

Prep Time: 25 min. Cooking Time: 30 min.

Heat oven to 350 degrees.

Melt margarine in large nonstick skillet on medium-high heat. Add mushrooms. Cook and stir 10 minutes or until mixture boils and moisture evaporates. Remove from heat; stir in bread crumbs.

Spray a 13x9-inch baking dish with nonstick cooking spray. Press mushroom mixture onto bottom of baking dish to form crust.

Cook sausage in nonstick skillet on medium heat 12 minutes, breaking sausage into small pieces and stirring frequently until lightly browned. Remove from heat; stir in bell pepper, parsley and red pepper.

Spread sausage mixture over crust; pour egg product evenly over mixture. Bake 25 minutes or until mixture is set.

Makes 12 servings.

Per serving using egg product: Cal 140; fat 6 g; protein 12 g; cholesterol 20 mg; carbohydrate 9 g; sodium 370 mg.

NOTE: For 6 servings: Use half of all ingredients; prepare and bake as above in 9-inch pie plate.
