Carne de puerco en chile verde (pork with green chile)

Quantity Ingredient
1 pounds Pork or beef
4 eaches Grn chiles, toasted/chopped
1 each Onion, med, chopped
1 cup Boiling water
1 x Oil or lard
2 eaches Cloves garlic, crushed
1 each Tomato, med, chopped
1 x Salt, pepper

Directions

Cut pork or beef into small cubes. Saute in oil until well browned. Drain off all but 1 tablespoon fat. Add chopped chiles, garlic, onion, tomato and water and season to taste with salt and pepper. Cover tightly and simmer 1 hour.
