Cheese muffins with apple variation

¼ cup Sugar
1 tablespoon Baking powder
½ teaspoon Salt
½ teaspoon Baking soda
2 cups Grated old Cheddar cheese
¾ cup Plain yogurt
¼ cup Melted butter or vegetable oil
2 larges Beaten eggs
2 cups Apple cubes
Cinnamon and nutmeg
¼ cup Butter
½ cup Flour
½ cup Golden sugar

Stir in cheese. In small bowl, combine yogurt, butter and eggs; add to dry ingredients and stir just until moistened. Fill greased muffin pans with batter. Makes 12 muffins. Bake 400 degrees for 20 minutes or until done.

This muffin recipe works well as a base for variations. One favourite variation is Apple.

For the Apple Muffins: prepare as above, with apple instead of cheese. Mix topping ingredients together and distribute over the batter. Tends to make more muffins than the cheese version.
