¾ cup Low-fat riotta cheese
Split and toasted
¼ teaspoon Finely shredded lime peel
2 Kiwi fruit -- sliced or
2 teaspoons Lime juice
1 cup Sliced strawberries
1 tablespoon Sugar
Or peaches
teaspoon Ground nutmeg

Directions

* In a small bowl, combine riotta cheese, lime peel, lime juice, sugar, and nutmeg. Spread cheese mixture evenly over toasted muffin halves. * Top each muffin half with kiwi fruit slices, strawberry slices or peach slices.
