Graham Cracker Almond Crust

¾ cup Sugar
1 cup Boiling water
1 cup Creamed cottage cheese
2 packs (8 oz. each) cream cheese
Softened
1 cup Heavy cream
1 tablespoon Vanilla
2 teaspoons Grated lemon rind
Knox unflavored gelatin

Directions

1. Prepare Graham Cracker Almond Crust. Press firmly and evenly over bottom and sides of 9 inch springform pan. Chill.

2. Combine gelatin with ¼ cup of the sugar in large bowl. Add the boiling water and stir until gelatin is completely dissolved. Beat in the remaining ½ cup sugar until well blended. Beat in cottage cheese, cream cheese, heavy cream, vanilla and le Graham Cracker Almond Crust: Combine 1 cup graham cracker crumbs, ½ cup ground almonds, 2 tablespoons sugar, ¼ cup melted butter or margarine and ½ teaspoon almond extractin small bowl. Stir to mix well.
