Cheesy broccoli soup

Ingredients

2 tablespoons Oil
¾ pounds Broccoli; coarsely chopped
1 Onion; chopped
3 tablespoons Flour
2 cups Chicken broth
¾ cup Milk
teaspoon Nutmeg
1 cup Cheddar cheese; extra sharp
Black pepper

Directions

Cook onion and broccoli in oil, covered, over low heat for 10 minutes, until broccoli is tender. Mix in flour, then chicken broth, stirring constantly; bring to a boil. Reduce heat and add milk and nutmeg; simmer on low, covered for 4 minutes. Turn off heat. Puree soup in blender or food processor; return to pot. Stir in cheese over very low heat, until melted.
