Chicken and shrimp gumbo (creole)

Ingredients

5 pounds Stewing hen, cut up
½ cup Shortening
1 cup Chopped onion
½ cup Chopped fresh parsley
½ teaspoon Pepper
2 pounds Uncooked shrimp
½ cup Chopped green onion
teaspoon Salt
½ cup Flour
2 tablespoons Worcestershire sauce
1 tablespoon Lemon juice
½ teaspoon Thyme
½ cup Chopped celery
1 teaspoon File powder

Directions

Sprinkle chicken with 1½ tsp of salt. Melt shortening in a large heavy pot. Add chicken pieces; brown, turning on all sides, for about 15 minutes Remove chicken.

Stir flour into hot fat in wich chicken was browned. Stir constantly, keeping heat low, until flour is dark brown.
