Chicken chinoise

3 Chicken Breast;skinned, bone
½ cup Celery;diced
1 cup Green Beans;blanched
½ cup Scallion;chopped
1 can Water Chestnut;drained, chop
1 cup Mushrooms;chopped
1 cup Chicken Stock
2 tablespoons Cornstarch
6 tablespoons Water;cold
2 tablespoons Soy Sauce
1 tablespoon Ginger;fresh, grated
tablespoon Oil;peanut

Directions

Cut chicken into bite-sized pieces.

Heat oil to very hot in wok or large skillet; add chicken, cook 1 minute. Add the rest of the vegetables and the ginger, cook 2 more minutes. Add the chicken stock. Mix the cornstarch with the water, add to the chicken, stirring constantly.

Add the soy sauce, cook 1 more minute.

Serve over rice.
