½ | cup | Celery;diced |
1 | cup | Green Beans;blanched |
½ | cup | Scallion;chopped |
1 | can | Water Chestnut;drained, chop |
1 | cup | Mushrooms;chopped |
1 | cup | Chicken Stock |
2 | tablespoons | Cornstarch |
6 | tablespoons | Water;cold |
2 | tablespoons | Soy Sauce |
1 | tablespoon | Ginger;fresh, grated |
tablespoon | Oil;peanut |
Directions
Cut chicken into bite-sized pieces.
Heat oil to very hot in wok or large skillet; add chicken, cook 1 minute. Add the rest of the vegetables and the ginger, cook 2 more minutes. Add the chicken stock. Mix the cornstarch with the water, add to the chicken, stirring constantly.
Add the soy sauce, cook 1 more minute.
Serve over rice.
