Coconut chicken with fresh fruit

Ingredients

Quantity Ingredient
8 eaches Boneless skinless chicken breast halves
2 tablespoons Butter or margarine
1 tablespoon Fresh ginger root -- chopped
Salt -- to taste
cup Flaked coconut, toasted & divided
1 cup Whipping cream
3 eaches Bananas -- quartered
1 large Papaya, peeled, seeded & sliced

Directions

Melt butter in large skillet over medium-high heat; add chicken and cook 4 minutes on each side or until lightly browned. Sprinkle with ginger, salt, and 3 T coconut; add whipping cream. Cover and cook over low heat 10 minutes. Arrange chicken, bananas and papaya on a large platter. Pour warm sauce over chicken and sprinkle with remaining coconut. Garnish with lime wedges and Italian parsley.
