Coconut shrimp

Ingredients

¾ cup Coconut milk
½ teaspoon Flour
tablespoon Canola oil or butter
1 tablespoon Garlic; minced
1 teaspoon JalapeĀ¤o pepper cored, seeded and minced
¼ teaspoon Turmeric
1 pounds Large shrimp peeled and deveined
½ teaspoon Garam masala
Salt
Chopped basil leaves OR cilantro to garnish

Directions

Put the coconut milk and flour in a small bowl and mix thoroughly.

Add the onion and garlic and cook until the garlic is golden. Add the jalapeno and turmeric and stir to distribute evenly. Add the coconut milk mixture and bring to a boil. Add the shrimp, reduce the heat, cover and simmer until the shrimp are opaque through (cut to test), 5 to 10 minutes. Gently stir in the garam masala and salt to taste.

Spoon shrimp onto individual plates, garnish with basil and serve.
