Cod soup with orange

Ingredients

Quantity Ingredient
4 cups Fish stock
pounds Cod fillets, cut into 1\" cubes
6 Potatoes, cubed
1 Fennel, cubed
1 Leek, white part only, shredded
8 ounces Can crushed tomatoes, undrained
2 Cloves garlic, minced Salt and pepper to taste
½ Orange, juiced
2 tablespoons Chopped parsley

Directions

Bring fish stock to a boil. Add remaining ingredients except orange juice and parsley; simmer 10-12 minutes. Add orange juice; simmer 3-4 minutes more. Serve soup piping hot, sprinkled with parsley.
