Corn cakes^

½ cup Yellow cornmeal
1 cup Boiling water
3 tablespoons Apple juice concentrate
1 cup Corn
2 Egg whites, beaten until
Stiff

Directions

Combine cornmeal, water and apple juice concentrate, mixing well. Add corn. Fold in egg whites. Spoon 1 tablespoon cakes onto a griddle sprayed with pam. Cook on each side until golden brown.
