Cowboy beans and rice

1 | tablespoon | Vegetable oil |
1 | medium | Onion; chopped |
1 | Medium-size green bell pepper; chopped | |
3 | cups | Cooked rice |
2 | cans | (15-16 oz) pinto beans; drained and rinsed |
¾ | cup | Barbecue sauce |
Directions
Heat oil in large skillet over medium-high heat until hot. Add onion and green pepper, cook and stir 3 to 5 minutes or until tender. Add rice, beans and barbecue sauce. Simmer 5 to 7 minutes or until thoroughly heated.
*Add ½ pound sliced smoked sausage or 4 frankfurters, sliced for a meaty main dish.
