Cranberry and pecan muffins

2 | Boxes Plain \"Jiffy Mix\" Muffin Mix | |
2 | cups | Sliced fresh cranberries |
1 | cup | Sugar |
¼ | cup | Water |
1 | cup | Chopped pecans |
Directions
Slice (or dice) fresh cranberries until you have two cups and place in small sauce pan. Over low heat on the stove, add sugar and water. Cook until cranberries are soft and tender, and a thick syrup has formed in the pan. Allow mixture to partially cool. Mix up Jiffy Mix Muffin mixes. Pour in cranberry mixture. Add chopped pecans. Note that your Jiffy Mix batter will look sort of grayish-purple. Bake per directions on the Jiffy Mix box in muffin tin (I usually line mine with cupcake papers)! Easy, and fast. I realize that this doesn't have the crumbly topping, but that shouldn't be too hard to add yourself. These are delicious and are usually a hit wherever I take them during the holidays.
