Cranberry-apple tart

3 | cups | Ralston(r) brand fruit & nut muesli with cranberries; crushed to 2 cups |
¼ | cup | (1/2 stick) margarine or butter; melted |
¼ | cup | Packed brown sugar |
2 | cups | Cranberries; fresh or frozen |
½ | cup | Sugar |
½ | cup | Water |
1 | tablespoon | Lemon juice |
1 | can | (20 oz.) apple pie filling |
Shredded cheese optional | ||
Mint leaves optional |
Directions
CRUST
FILLING
To prepare crust, preheat oven to 350 degrees F. In medium bowl combine cereal, margarine and brown sugar. Press cereal mixture firmly into 9-inch fluted tart pan or 9-inch pie plate. Bake 7 to 8 minutes or until lightly browned. Cool completely.
To prepare filling, in medium saucepan over medium heat combine cranberries, sugar, water and lemon juice. Cook, stirring frequently, until mixture comes to a boil; reduce heat and simmer 15 to 18 minutes, stirring frequently. Remove from heat and cool completely. Pour apple pie filling into cooled crust; top with cooled cranberry mixture. Garnish with cheese and mint if desired.
