Custard filling for eclairs

3 cups

Ingredients

Quantity Ingredient
cup Milk
5 Egg yolks
¾ cup Sugar
cup Flour
2 tablespoons Flour
2 tablespoons Butter
3 teaspoons Vanilla
FOR CHOCOLATE FILLING:
3 Sq. unsweetened chocolate

Directions

Heat milk to scalding. Beat yolks and sugar in a large bowl until thick. Beat in flour until well mixed. Greadually beat in scalded milk; pour mixture back into saucepan. Cook, stirring constantly until thick and boiling. Lower heat, and cook 2-3 minutes, stirring constantly until quite thick. Remove from heat. Stir in butter and vanilla. Place a piece of plastic wrap directly on the filling and chill 2 hours. If too thick, stir in a teaspoon of milk.

FOR CHOCOLATE FILLING: Add unsweetened chocolate to milk while scalding, stirring often until melted.
