Danish yellow pea soup

Ingredients

Quantity Ingredient
1 pounds Split yellow peas
2 quarts Chicken stock
1 Meaty smoked ham bone
1 medium Onion, chopped
2 Carrots, chopped
2 Ribs
1 medium Potato, peeled & finely cubed
1 Bay leaf dashes
1 Clove garlic, pressed or minced celery, chopped thyme, marjoram, savory

Directions

Optional: handful of frozen green peas 1 peeled & chopped tomato Rinse and sort peas. To stock pot, add peas, stock and ham bone; simmer 1 hour. Add the veggies and seasonings and cook for another 1 to 1-½ hours. If using optional veggies, add during last ½ hour of cooking. When done, remove bay leaf and serve. Makes a nice main course with a green salad & crusty loaf or dill bread.
