Danish yellow pea soup

1 | pounds | Split yellow peas |
2 | quarts | Chicken stock |
1 | Meaty smoked ham bone | |
1 | medium | Onion, chopped |
2 | Carrots, chopped | |
2 | Ribs | |
1 | medium | Potato, peeled & finely cubed |
1 | Bay leaf dashes | |
1 | Clove garlic, pressed or minced celery, chopped thyme, marjoram, savory |
Directions
Optional: handful of frozen green peas 1 peeled & chopped tomato Rinse and sort peas. To stock pot, add peas, stock and ham bone; simmer 1 hour. Add the veggies and seasonings and cook for another 1 to 1-½ hours. If using optional veggies, add during last ½ hour of cooking. When done, remove bay leaf and serve. Makes a nice main course with a green salad & crusty loaf or dill bread.
