Delmarva meal in a bowl

Ingredients

2 quarts Shelled lima beans
Water
1 slice Salted side meat or fat back
Salt to taste
Sugar to taste
2 Potatoes; peeled and chopped
2 Tomatoes; peeled, seeded, and chopped
Kernels from 2 or 3 ears of corn

Directions



Recipe from "Call it Delmarvalous" Put beans in a big pot with water and side meat. There should be enough water to cover the ingredients. Add tomatoes, salt, sugar, and potaoes.

Simmer about 2 hours. Add more water if necessary. Ten minutes before serving, add corn kernels. Serve in a bowl with the broth on a warm summer day with hot biscuts, iced tea, and cantaloupe for dessert.
