Diced vegetable salad

Ingredients

Quantity Ingredient
2 green bell peppers (capsicums)
4 larges tomatoes
2 onions, peeled
2 kirby cucumbers of 1 small cucumber, peel; ed
2 eggs, hardcooked (hardboiled) (opti; onal)
1 small can tuna (optional)
¼ cup olive oil
2 tablespoons white wine vinegar
salt

Directions

Dice all the ingredients finely into ½ inch cubes and dress with the Olive oil, Vinegar and salt. Mix thoroughly. Chill for at least 1 hour before serving.
