Diet italian cheese cake

3 | tablespoons | Diet margarine; melt |
⅔ | cup | Graham cracker crumbs |
2 | teaspoons | Sugar |
15 | ounces | Low-fat ricotta |
3 | Eggs | |
2 | tablespoons | Skim milk |
1 | tablespoon | Grated lemon rind |
1 | tablespoon | Rum extract or rum |
4 | packs | Sweet 'n Low |
2 | tablespoons | Almonds; slice/blanch |
4 | Cherries; chop | |
1 | tablespoon | Dark raisins |
Directions
Make crust of crumbs and margarine. Put in pan. Bake in 375~ oven for 7 minutes or until crisp. Put ricotta in bowl; add eggs. Mix and add milk, sugar and rum extract. Blend well. Pour over crust. Sprinkle almonds, cherries and raisins over top. Bake at 375~ for 30 minutes.
