Source: The National Culinary Review, Jan'94 Doug Kafka, cowboy, poet and cook, was once a wagon-master on wagon trains. This recipe is from an upcoming book by Beverly Cox and Martin Jacobs, authors of Spirit of the Harvest, North American Indian Cooking. The beans were served to members of the food media during the 1993 National Beef Cook-Off in Cheyenne, Wy. 1 large onion, peeled and chopped 1 large green bell pepper, seeded and chopped ½ pound bacon, chopped 2 cups brown sugar ½ cup ketchup ½ cup Coca-Cola Classic (no other cola will do) 16 cups cooked or canned pinto beans, drained (do not rinse) Salt and ground pepper to taste Method: In large pot over medium heat, saute onion and pepper with bacon until bacon is cooked. Stir in brown sugar, ketchup and cola; blend well. Add beans, mix together and simmer in preheated 275' oven for about 2 hours. Submitted By SHERREE JOHANSSON On 10-18-94
