Ingredients

2 | cups | All-purpose flour |
2 | tablespoons | Sugar; up to 4 |
2½ | teaspoon | Baking powder |
½ | teaspoon | Salt |
1½ | cup | Shredded Edam cheese; about 6 oz |
1 | Egg | |
1 | cup | Milk |
¼ | cup | Butter or margarine; melted |
Directions
Sift flour, sugar, baking powder and salt together. Fold in the cheese, coating the cheese with the flour mixture. Add the unbeaten egg, milk and melted fat; stir quickly and lightly until mixed but do not beat. Spoon into well greased muffin pans, filling each cup ⅔ full. Bake at 400 F for 20 to 30 minutes according to size of muffin cups. Makes 16 medium muffins.
