Fast break from eggs breakfast casserole

12 | ounces | Turkey sausage (hot or mild, your choice) |
2 | cups | Apples, peeled and cut in chunks |
½ | cup | Raisins |
¼ | cup | Shredded carrots |
¼ | teaspoon | Nutmeg |
½ | teaspoon | Cinnamon |
1 | cup | Jicama, peeled and julienned |
1 | cup | Bulgar wheat |
⅓ | cup | Plain nonfat yogurt |
¼ | cup | Scallions, sliced very thin (tops included?) |
Directions
Combime the uncooked sausage, apple chunks (small cubes), raisins, carrots, scallions, nutmeg, cinnamon, jicama, and bulgar wheat with ⅓ cup nonfat plain yogurt. Bake it in a loaf pan for 40 minutes.
