Figs in sauternes

Ingredients

1½ | cup | Sauternes |
2 | tablespoons | Sugar |
1 | each | Vanilla bean, seeds removed and pod reserved. |
1 | Zest of 1 lemon, finely minced | |
Juice of 1 lemon | ||
1 | pounds | Fresh figs |
2 | tablespoons | Finely chopped fresh mint |
Directions
In a medium saucepan, combine the Sauternes, sugar, vanilla bean pod and seeds, zest, and juice. Simmer over medium heat for 8-10 minutes, until tender. If the syrup becomes too thick, stir in 1 tb. of water.
Remove the vanilla pod and stir in the mint. Cool the figs in the syrup and serve at room temperature.
