Fillet of salmon poached in lemon and wine

Ingredients

⅓ | cup | Lemon juice |
½ | cup | Dry white wine |
4 | larges | Salmon fillets |
2 | tablespoons | Minced parsley |
Directions
1. In a large skillet over medium-high heat, bring lemon juice and wine to a boil. Lower heat to medium. Add salmon and cover skillet.
2. Poach salmon until it flakes when pressed with a fork (5 to 8 minutes).
Remove from poaching liquid and serve immediately, sprinkled with parsley.
