Flax banana bread

Ingredients

Quantity Ingredient
cup Flour
¾ cup Flaxseed granules; or ground flax
½ cup Sugar
1 teaspoon Baking powder
½ teaspoon Baking soda
½ teaspoon Salt
2 larges Eggs; or 1/2 cup egg substitute
cup Applesauce
1 cup Bananas: 2-3 ripe; mashed
½ cup Chopped walnuts
¼ cup Brown sugar
½ teaspoon Cinnamon

Directions

Preheat oven to 350F.

1. In a large bowl mix together flour, flaxseed, sugar, baking powder, baking soda and salt.

2. In a separate bowl beat together eggs and applesauce. Add dry ingredients and mashed banana alternately to egg and oil mixture, stirring until dry ingredients are moistened.

3. Pour into a greased loaf pan. Combine nuts, brown sugar and cinnamon and sprinkle over batter in loaf pan. Pat down gently into batter. Bake for 55-60 minutes.
