French goat''s cheese quiche

250 grams Plain flour; (8oz)
1 pinch Salt
125 grams Butter; melted (4oz)
2 tablespoons Water
25 grams Butter; (1oz)
1 150 gram car goats cheese
1 200 gram car Creamy full fat soft cheese
4 tablespoons Creme fraiche
2 Eggs; medium-size
1 tablespoon Freshly chopped chives
Salt and freshly ground black pepper

FOR THE FILLING

1. To make the pastry, place the flour, salt, butter and water in a bowl and mix well.

2. Press into a 20 cm (8inch) fluted flan case and bake blind in a preheated oven 200 C, 400 F, Gas Mark 6 for 12-15 minutes.

3. For the filling, beat together the butter, cheeses, creme fraiche, eggs, chives and seasoning.

4. Spoon into the pastry case and return to the oven for 25-30 minutes until golden.
