French onion soup with miso

Ingredients

1 tablespoon Vegetable oil
4 larges Yellow onions; thinly sliced
3 tablespoons Dark miso
2 cups Water
4 slices French bread
1 tablespoon Dijon-style mustard
1 cup Shredded reduced-fat Swiss cheese. or soy

Directions

1. Heat a large heavy pot over medium heat. Add oil and onions and toss to combine. Cook over very low heat for 1-½ to 2 hours, stirring every 15 to 20 minutes. 2. Dissolve mis0 in ½ cup water and add to pot along with remaining water Bring to a boil, stir well, and remove from heat. 3.

Preheat broiler. Divide hot soup between 4 individual oven-proof bowls.
