French onion soup with miso

2 | cups | Water |
4 | slices | French bread |
1 | tablespoon | Dijon-style mustard |
1 | cup | Shredded reduced-fat Swiss cheese. or soy |

Directions
1. Heat a large heavy pot over medium heat. Add oil and onions and toss to combine. Cook over very low heat for 1-½ to 2 hours, stirring every 15 to 20 minutes. 2. Dissolve mis0 in ½ cup water and add to pot along with remaining water Bring to a boil, stir well, and remove from heat. 3.
Preheat broiler. Divide hot soup between 4 individual oven-proof bowls.
Spread bread slices with mustard and place mustard-side down on top of soup. Sprinkle equal amounts of cheese over bread. 4. Place bowls under broiler until che
