Fresh apple cake with brown sugar glaze

Ingredients

Quantity Ingredient
3 Eggs
2 cups Sugar
1 cup Cooking oil
3 cups Sifted all-purpose flour
1 teaspoon Baking soda
½ teaspoon Salt
1 teaspoon Ground cinnamon
2 teaspoons Vanilla extract
3 cups Chopped apples; peeled (better if apples are tart)
1 cup Pecans; chopped
½ cup Raisins
1 cup Brown sugar; (dark or light)
½ cup Margarine
½ cup Milk

Directions

BROWN SUGAR GLAZE

In a large mixing bowl beat eggs and sugar together. Add oil and mix.

Combine dry ingredients in a separate bowl and add this to the egg mixture.

Mix well; add vanilla and fold in Chopped apples, pecans, and raisins. The batter will be very thick.

Pour batter into a greased 1O-inch tube pan. Bake in preheated 325°F oven for one hour or until cake is done.

GLAZE: Bring glaze ingredients to a boil for 2-3 minutes in small saucepan and pour over hot apple cake in tube pan. Let stand for 2-4 hours.
