Fruit flan

Ingredients

Quantity Ingredient
3 mediums Eggs
3 ounces Caster sugar
3 ounces Plain flour
1 can Red cherries
2 tablespoons Black cherry jam
½ pint Double cream
Optional - 2 tbsp brandy

Directions

Whisk together the sugar and eggs until double the size. Fold in the flour until there are no luombps and pour into a well greased 8 inch sponge tin and bake at 220 C/ Gas 7 for 8-10 minutes. Remove and leave to cool.

Gently heat the black cherry jam. To a knob of butter add the cherries and the brandy and flambe for a couple of minutes.

Add the warmed cherries to the sponge and add any juices to the black cherry jam. Spoon the waremd jam over the cherries.

Around the edge decorate the flan with whipped double cream and serve.
