Fruited brown rice muffins

Ingredients

2¼ | cup | Whole wheat pastry flour |
3 | teaspoons | Baking powder |
1 | teaspoon | Salt |
¼ | cup | Wheat germ; (I used 1/4 c oat bran instead) |
¾ | cup | Raisins |
1 | cup | Rice or soy milk; (could substitute apple juice) |
2 | Egg whites beaten | |
¾ | cup | Cooked brown rice |
¼ | cup | Unsweetend applesauce |
Directions
Sift together flour, baking powder, and salt, and stir in wheat germ (or oat bran). Add raisins, milk, egg whites, rice, and applesauce and blend briskly. Fill greased muffin tins ⅔ full and bake at 425 for 30 minutes.
Makes 15 Nice, Moist Muffins.
