Fruited jello and cottage cheese

Ingredients

Quantity Ingredient
1 Container (16 oz) lowfat cottage cheese
1 pack (4-serving size) Orange flavored Jello, sugar-free
¾ cup Boiling water
½ cup Cold water
Ice cubes
1 can (11 ozs.) mandarin orange sections, drained

Directions

Here are some of my favorites from the Sugar-free Jello Cookbook.

Place cottage cheese in a blender or food processor container; cover. Blend til smooth;set aside. Completely dissolve the jello in boiling water.

Combine cold water and enough water to make 1¼ cups. Add to jello; stir til slightly thickened. Remove ice;stir in oranges. Divide cottage cheese among 8 individual serving dishes. Spoon jello mixture over cottage cheese.

Chill till set, about 2 hrs.
