From: James Porter <porterj@...> Date: Mon, 5 Aug 1996 13:12:40 -0600 Gamasio is the name for a delicious toasted sesame seed/salt mixture. It is used as a condiment on rice, salads, baked potaotes, etc.. To prepare, simply toast ½ cup hulled sesame seeds in a dry skillet over medium heat, stirring constantly for 3-5 minutes. They will burn quickly if not attended to constantly. As soon as they begin to brown, transfer them to another container and cool. Put into a blender or mini-grinder, add ½ teaspoon of sea salt and pulse/grind a 3-4 seconds. There should be some whole seeds remaining. Store in an air-tight container and add a teaspoon or so at the table as a garnish on rice.
