Garlic lover's potatoes <r t>

Ingredients

1 pounds New Potatoes; The Smallest You Can Find
Olive Oil; As Needed
4 Cloves Garlic; Peel, Thickly Sliced
1 tablespoon Minced Shallots
teaspoon Salt
Freshly Ground Pepper; To Taste
Chopped Fresh Rosemary; Or
Chopped Fresh Parsley; For Garnish

This was a very good meal!! If you eat the Swiss Chard as part of a meal it will fall into a low enough CFF percentage.

This is also good cold - right out of the refrigerator - for late night snacking.

Scrub the potatoes well. If large, cut into thick slices. Steam for about 7 min, or until they are firm but slightly tender.

Pour oil into casserole dish. Add the steamed potatoes, garlic, shallot, salt and pepper. Toss to mix well.

Bake, uncovered, in a preheated 350F oven for 30 min. Stir a couple of times during baking so potatoes cook evenly.

If desired, garnish with freshly chopped rosemary or parsley.

Serves 4

These were very, very good!! Yes, even cold they were good.
