Gnocchi with pesto and peas

Ingredients

Quantity Ingredient
2 mediums Boiling potatoes
1 pounds Frozen potato gnocchi
1 Jar (10 oz) pesto sauce
1 cup Frozen peas, thawed
cup Grated Parmesan cheese

Directions

1. Preheat the broiler. Peel and dice the potatoes.

2. Bring a large pot of salted water and the potatoes to a boil. When the water boils, add the frozen gnocchi and cook, uncovered, until the gnocchi float to the top of the water, about 2 min. Drain the gnocchi and potatoes.

3. Gently toss the gnocchi and potatoes with the pesto sauce and peas.

Spoon the gnocchi into a 1½-quart shallow flameproof dish and sprinkle with Parmesan cheese.

4. Broil about 4-inches from the heat for 1-2 min, until the cheese is lightly browned and bubbly.
