Ingredients

Quantity Ingredient
5 Feet medium hog casings
5 pounds Goose meat-15% fat
½ cup Drambuie
2 teaspoons Salt, or to taste
2 teaspoons White pepper
½ cup Very finely chopped onion
¼ cup Chopped fresh chives
1 teaspoon Mace
1 teaspoon Ground coriander
½ teaspoon Cayenne pepper
1 teaspoon Sweet paprika

Directions

Prepare the casings. Grind goose through the coarse disk, combine with Drambuie and refrigerate at least three hours. Mix with remaining ingredients; grind using fine disk and stuff into casings. Twist off into 3-4" links. Saute in vegetable oil until evenly browned and cooked through.
