3 | tablespoons | Fat |
3 | tablespoons | Paprika, hungarian |
1½ | pounds | Beef chuck, boneless; cut in 1 1/2-inch cubes |
1 | large | Carrot; scraped and diced |
Salt and pepper; to taste | ||
1 | large | Tomato; peeled and chopped |
2 | mediums | Potatoes; peeled and chopped |
Directions
Recipe by: The Eastern European Cookbook-ISBN 0-486-23562-9 In a large saucepan, saute onions in fat until limp. Remove from fire; add paprika. Mix well and return to heat. Add meat cubes; brown. Add carrot, salt, pepper and 4 cups water. Simmer, covered, for 1 hour. Add more water while cooking, if needed or desired. Add tomato and potatoes' cook another 30 mins. Serves 4 to 6.
NOTES : In Hungary this soup, gulyasleves, which sometimes includes small
pinched noodles as well as potatoes, is a meal in itself. It is thick and flavorful.
