Grilled aubergine and red onion salad

2 Aubergines
Olive oil
1 Red onion
2 Boiled eggs
2 tablespoons Capers
Red wine vinegar

Directions

Slice the aubergine lengthwise and thinely. Grill on a ridged grill plate.

Transfer to a plate and drizzle with olive oil. Slice the onion and scatter, do the same with the eggs. Throw on the capers and vinegar and season.
