Grilled beef fillet with vegetables and herb sauce

650 grams Beef fillet in a piece
2 Cloves garlic
2 tablespoons Oil
4 Peppers
4 Courgettes
4 Tomatoes
½ cup Fresh coriander leaves
1 cup Fresh parsley sprigs
2 tablespoons Fresh thyme leaves
2 Cloves garlic
¾ cup Oil
½ teaspoon Salt
Freshly ground black pepper

HERB SAUCE

Beef:

Remove any fat and sinew from the fillet.

Crush garlic, peel and chop roughly. Mix with oil.

Cut peppers in half and deseed. Cut into quarters.

Trim courgettes and leave whole.

Wash tomatoes.

Brush meat and vegetables with garlic oil.

Barbecue fillet over glowing coals or frill for 10 minutes per side or until preferred doneness.

Remove meat to a heated platter. Cover with foil and stand for 5 minutes.

Grill vegetables turning often until cooked and golden. Remove to a heated platter.

Slice beef and serve with vegetables and drizzle with Herb Sauce.

Herb Sauce:

Place herbs in the bowl of a food processor.

Crush garlic, peel and add to herbs with oil, salt and pepper.

Process to combine.
