Grilled chicken breasts with cilantro pecan pesto

Ingredients

1 cup Cilantro -- loosely packed
1 tablespoon Garlic -- minced
¼ cup Pecans -- chopped
6 tablespoons Olive oil
¼ cup Lime juice
6 dashes Tabasco sauce
Salt and pepper
4 Boneless skinless chicken breasts
¼ cup Oil
Salt and pepper

Directions

Make the pesto: combine first 7 ingredients in a food processor and process until a rough paste is formed. Cover and set aside. Coat the chicken lightly with oil on both sides and sprinkle with salt and pepper. Grill the chicken over a medium fire, 7 to 9 minutes per side. Remove the chicken from the fire, top each breast with a generous tbsp of pesto. Serve with Red Cabbage Slaw.
