Grilled chicken with pepper sauce

15 | grams | Butter; melted (1/2oz) |
2 | Fresh chillies; seeds removed | |
2 | larges | Red peppers; cored and chopped |
75 | grams | Sundried tomatoes; (3oz) |
2 | teaspoons | Soft light brown sugar |
1 | tablespoon | White wine vinegar |
1 | 227 gram can chopped tomatoes; (8oz) | |
Salt and freshly ground black pepper | ||
1 | tablespoon | Freshly chopped parsley |
Directions
1. Brush the chicken breasts with melted butter and place under a preheated moderate grill for approximately 15 minutes turning occasionally.
2. Meanwhile, place the remaining ingredients in a food processor or blender and blend until smooth. Transfer to a saucepan.
3. Simmer the sauce for 3-4 minutes then pour over the cooked chicken breasts, and sprinkle with parsley.
