Grilled marinated chicken w grilled pepper and olive relish

Ingredients

2 Whole Chickens; quartered
1 cup Grilled Pepper And Black Olive Relish; see * Note
=== GARLIC AND FRESH OREGANO MARINADE ===
¼ cup Olive oil
½ cup Coarsely chopped garlic
½ cup Coarsely chopped fresh oregano leaves
1 tablespoon Sherry vinegar
2 tablespoons Lime juice
1 tablespoon Honey
2 teaspoons Ancho powder

Directions

Combine all of the marinade ingredients in a mixing bowl. Mix until thoroughly combined. Marinate the chicken for 1 hour. Prepare a wood or charcoal grill and let it burn down to embers. Grill chicken for 4 minutes on each side or until done. Serve with the Grilled Pepper And Black Olive Relish spooned over it. This recipe yields 4 servings.
