Ham jackets

1 | tablespoon | Olive oil |
2 | Tomatoes | |
4 | slices | Smoked ham |
2 | teaspoons | Freeze dried chives |
Directions
Preheat the oven to 200 C, 400 F, Gas Mark 6.
Wash and prick the potatoes with a fork. Place on a baking sheet on the middle oven self for about 1 hour and 30 minutes.
When the potatoes are cooked, take them carefully out off the oven using oven gloves.
Wash the tomatoes and cut them in small cubes.
Cut the smoked ham in small pieces.
Cut the potatoes in half lengthways. Scoop out the potato flesh and put it in a bowl with the olive oil. Take care as the steam from the potatoes is hot.
Mix the tomatoes and ham and chives with the potato mixture.
Spoon the filling back into the potato skins.
Place on a baking sheet and return to oven for 15 minutes.
Carefully remove the potatoes from the oven using oven gloves and turn the oven off. Serve with salads of your choice.
