Hardy vegetable soup

Ingredients

Quantity Ingredient
4 quarts Water
¾ cup Celery, chopped
¾ cup Onion, chopped
2 Garlic cloves, chopped
1 cup Carrots, sliced
2 cups Potatoes, diced
2 tablespoons Canola oil
½ cup Tomato paste
½ cup Green pepper, diced
1 cup Mixed vegetables *
½ tablespoon Sweet basil
Salt & pepper to taste
½ cup Macaroni
½ cup Pot barley
2 cups Chicken, beef,ham (leftovers
2 cups Coarsely chopped cabbage
1 Tomato, chopped

Directions

In a soup pot saute the celery, onion and garlic in oil for 5 minutes. Add water, vegetables, pot barley, meats, seasonings. Bring to the boil and simmer for 1¼ hours. For last ¼ hour add cabbage and macaroni. * Soup mix
