Hardy vegetable soup

1 | cup | Carrots, sliced |
2 | cups | Potatoes, diced |
2 | tablespoons | Canola oil |
½ | cup | Tomato paste |
½ | cup | Green pepper, diced |
1 | cup | Mixed vegetables * |
½ | tablespoon | Sweet basil |

½ | cup | Macaroni |
½ | cup | Pot barley |
2 | cups | Chicken, beef,ham (leftovers |
2 | cups | Coarsely chopped cabbage |
1 | Tomato, chopped |
Directions
In a soup pot saute the celery, onion and garlic in oil for 5 minutes. Add water, vegetables, pot barley, meats, seasonings. Bring to the boil and simmer for 1¼ hours. For last ¼ hour add cabbage and macaroni. * Soup mix
